I know I already have a vanilla ice cream on this blog - but this one is better! It uses young coconut (my FAV) and macadamias (YUM!) This recipe might want to be doubled because it's so great. :) You could use a mixture of macs and pine nuts to bring down the cost (those macs are $$$.)
1 cup macadamias, soaked 4 hours or more and drained
meat from 1 young coconut (reserve water)
1/2 agave nectar, to taste
2 Tablespoons coconut butter
1 Tablespoon vanilla extract
1/2 vanilla bean seeds, scraped (optional)
1/4 teaspoon sea salt
Mix nuts in vitamix or high speed blender to chop. Add remaining ingredients and blend. Add enough coconut water to turn over. (1/4 - 1/2 cup)
Freeze in ice cream maker;or put in freezer safe container and stir every hour until solid (this gets a little air onto it.)
You can add any flavorings to this base before freezing - almond/almond extract, hazelnuts/halzenut extract, peppermint & raw cacoa nibs (a personal favorite,) rosewater or lavender, powdered ginger/ginger chunks, raw cocoa powder and a little more agave (for chocolate,) raw chocolate cookie dough chunks (look for my recipe on this blog,) cherry or berries (such as strawberry,) cold press coffee... Think of your fave ice cream, and see if you can't recreate it!
