Broccoli Guaccoli Wraps


Here's a quick, yummy way to eat my ever favorite guacamole -and broccoli!


1/4 cup cilantro, chopped
1 avocado, diced
1/2 teaspoon sea salt, or to taste
1-2 garlic cloves, minced or pressed
1/4 cup red onion
1/2 teaspoon cumin, optional
juice of 1/2 lime (lemon would do in a pinch)
1 cup broccoli


Throw all but red onion in a food processor and process until combined. Stir in onion by hand.


tomatoes, sliced or diced
yellow pepper, diced
collard leaves, washed and trimmed of large stems


Lay a prepared collard leaf on your preparation area or plate. Spread a little of the broccoli guac in the center. Add tomatoes and peppers if desired. Wrap egg-roll style. Serve immediately. Will keep in the fridge for a couple hours.

Raw Maki Salad


This is for those who like all the flavors of maki and sushi rolls, but want a quick version. I didn't add the rice to mine in the picture.


Rice:
1/4 cup parsnip or jicima
1/4 cup pine nuts
2 tablespoons rice wine vinegar, or more to taste
1/4 teaspoon braggs or nama shoyu, or more to taste
1/4 teaspoon agave nectar, or more to taste


Mince all in food processor until rice sized pieces form. Toss with:


3 raw nori sheets, torn into bite sized pieces
1 cucumber, diced
1 avocado, mashed
1/2 teaspoon braggs or nama shoyu, or more to taste
1/4 teaspoon wasabi, or more to taste

Quick Raw Vanilla Shake

Adapted from Carol Alts Raw 50. This awesome vanilla base is great for any malt/shake fruits! This is like a traditional "junky" shake, maybe a little less creamy. It has a slight green tint if you don't add any fruits. Try it out and let me know what you think. (It's so easy and tasty.) Stir in fresh blueberries, strawberries, raspberries, bananas, or your favorite fruit as an alternative! Awesome!


Ingredients
1 tablespoon vanilla
1 teaspoon sea salt
1 cup ice (plus more if you'd like)
1 cup water
3 tablespoons raw agave nectar
½ avocado


Preparation
Blend all in Vitamix until smooth. (You may wish to use a little less salt, and a little less agave if you don’t want it as sweet.)
